Fajita Spice


If you are anything like me I have a complete drawer designated to spices, so who really needs to go out to buy that Old El Paso Fajita Spice?? Wait you mean you don't have a huge drawer of spice? and that I might have some serious food issues....yeah your probably right! No disrespect if purchasing the prepackage spice works for you, then you keep doing you. However, if you don't want to settle for the norm then here's the recipe.



Ingredients:
  • 1 Tbsp cornstarch
  • 2 Tsp. chili powder
  • 1 Tsp. salt
  • 1 Tsp. paprika
  • 1 Tsp. white sugar
  • 1/2 Tsp. onion Powder 
  • 1/2 Tsp. garlic Powder
  • 1/4 Tsp. cayenne pepper
  • 1/2 Tsp. ground cumin
Mix all ingredients together and place in a container!


Dairy free Chicken Alfredo

For years I have loved Chicken Alfredo with penne noodles with extra cheese...now not so much! Thankfully James is very creative with trying alternative ingredients to re-create that favourite meal for me :) I'm a pretty lucky gal.

Ingredients:

  • 946ML Almond milk (we normally use the Blue Diamond brand)
  • 2 Tbsp of flour
  • 3 Tbsp Steak spice
  • 2 Tbsp Salt
  • 2 Tbsp Pepper
  • 3 Tbsp garlic powder
  • 2 Tbsp onion powder
  •  Spinach
  • Mushrooms 
  • Penne Noodles 
  • Chicken breasts


Instructions:

  1. Cook chicken until you see no pink.
  2. Add Almond milk, flour, spices, spinach, mushrooms, and noodles into the same large skillet that you used to cook the chicken. 
  3. Cook on high heat until it boils, then lower heat to allow to simmer. 
  4. Cook covered for 10mins. Remove cover and cook for another 10mins or until sauce is reduced or thickened. 
  5. Enjoy!

Chicken Fajita Pizza

Nothing is more annoying then when you and your significant other want two different things for dinner, and neither of you want to cave for each other's choice.....Our Saturday story: "Hey babe want do you want for supper tonight?"....we are currently walking around in Superstore.... him: "I don't know what do you want?"....I start to roll my eyes and don't bother answering right away...then as we get close to leaving I say "I want pizza" him: "ok do you want chicken pizza or do you want pepperoni?"..."I would like chicken"...so we start to head towards the meat section and then out of no where he get's this ridiculous look on his face and says "wait I want Fajitas and you want pizza so....let's put that together!"

This is how Fajita pizza was made :) So here is the recipe.

Pizza Dough:

Thankfully we have a bread maker and pizza brick as both make this process very easy and delicious every time.


  • 2 tsp. Dried granulated yeast
  • 3 cups of Flour
  • 1 tsp. Salt
  • 2 tbsp Sugar
  • 2 tbsp Olive Oil
  • 1 cup Water
  • 2 tbsp water

Add all ingredients and select pizza dough setting. Once that is done we heat up the oven for about 2-3 mins and then shut it off ( we also add the brick during this time to heat it up so it easier to roll the dough out). Take the dough out of the bread maker and place it in a glass bowl with a small amount of olive oil and roll it around and cover it with a tea towel and place in the oven for 20mins to allow for it to rise. Then remove brick and roll out dough on brick. You are now ready to add your ingredients!!

Fajita Mix:

  • 3 pieces of chicken breast
  • 1 Onion
  • 2 Bell peppers
  • Fajita Seasoning (we make are own but package one's work too)
  • 1 can of pizza sauce 
Cut chicken into small pieces. Cut onion and bell peppers to your preference. In a skillet cook up chicken until fully cooked then add to a bowl. Place onion and peppers in the bowl and mix. Add Fajita seasoning and stir well until all ingredients are covered with seasoning. Add the pizza sauce to your pizza and then spread fajita mix. You may add cheese however we need to keep it dairy free in this house. Cook pizza for about 30mins at 350F. Cook time may very depending on your oven. Please enjoy!

C is for Cookie

With Christmas about a couple of weeks away, this means cue the holiday treats at the office. Which means for me I either A) have to make my own safe treat or B) curl up in a ball under my desk with my carrots and cucumbers...yeah option A for the win!

Luckily when I was at Sobey's I came across dairy free, gluten free, nut free chocolate chips. Saaaaayyyyyy what. If it wasn't for the extreme price of $6.50 ish for 225g I would have cleared the shelf and ran to the cash like a robbed the place. I haven't had chocolate in over 6 months feel bad for me.

So enjoy this chocolate chip cookie recipe cause I sure the hell did!!




Ingredients:
  • 1 Cup of dairy free butter- I used dairy free margarine 
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/4 almond milk
  • 1 tsp vanilla extract
  • 2 1/4 cup of flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • dairy free chocolate chips

Directions:
  • Pre-heat over to 350F
  • In a large mixing bowl cream butter and both sugars together
  • Add vanilla and almond milk
  • Add salt, flour, baking soda.Mix very well. Add chocolate chips. 
  • Form cookies and place on cookie sheet with parchment paper.
  • Bake for 10-12 mins or until edges are brown

Black Bean Burger

Fun fact- if you are allergic to the protein in milk...well where does milk come from....you have to be kidding me...noooooooooo looks like steak is no longer in my future. At this point I give up on eating meat. Ok maybe I'll leave 5% to animal by product, cause who is kidding who...I love eggs lol.

Due to this fun fact and a ton of Netflix documentaries James and I have decided to try a plant based diet/lifestyle. So here is my first try at black bean burgers, and they where delicious.



Ingredients:

  • 1 Can of black beans
  • 1/4 cup of frozen corn
  • 2 tbsp of flour
  • 1 tsp water
  • seasoning ( garlic powder, cumin, chilli powder, pepper, oregano)
Directions: 

In a large skillet heat and add oil, I used extra virgin olive oil but you could use coconut oil. Drain and rinse black beans. Place in large bowl and with a fork begin to mash them. Add flour, seasoning, corn and water. Mix ingredients together. Form patties ( it makes 3). If you would like more just double the recipe. Depending how you like your burgers you can cook each side for 2-3 minutes or longer depending on the crispness you enjoy. Next time I'm thinking of placing on the George Forman to cook it faster and to give me my crunch.

Dairy Free Donair Sauce

Since finding out about my dairy allergy, I've had to become very creative in finding alternatives to the foods that I loved before! Pizza being one. So I tried the Daiya cheese and could not get over the plastic taste. So said to myself you're not desperate enough to eat chemically enhanced foods in order to have pizza, go without! Donair pizza for the win.


Ingredients:


  • 1 Cup of canned coconut milk
  • 1/4 cup of sugar
  • 1/4 cup of canned white beans
  • 1 glove of garlic
  • 2-3 tsp of apple cider vinegar
  • 1 tsp of sea salt 

Directions:

In a small saucepan heat coconut milk, sugar, and garlic over medium heat. Bring to a simmer and add vinegar and beans. Allow to cook over medium for about 5 minutes. Puree mixture with a blender or hand blender and if needed return to burner to thicken further. Season with salt to taste.

All about waffles


This Christmas santa brought us a waffle maker! Might I add this is the most amazing waffle maker I have ever seen. It has smart technology with setting for different types of waffles you want to make, how dark you want them, and they all cook to perfection. Now no need to tell you how many endless amount of recipes you can make not only for breakfast but for lunch and supper.



Breville is such an amazing company when it comes to appliances. We also have there smart toaster which fits the size of the waffle and has a great frozen setting. So we now make a bunch and freeze them so we have quick breakfast if we are in a rush!!
